Sun Valley Club runs October through May only, and private events cannot begin until after 6 PM. Those two facts shape everything.
No daytime start means no daytime load-in into an empty room. Setup happens around a working clubhouse, which is slower and needs planning rather than improvisation. Anyone quoting you here without accounting for that has not worked it.
The season also means you are planning a winter or shoulder-season wedding, with everything that implies for travel, guest lodging and the drive up. I quote Sun Valley as an overnight and say so on the estimate.

Rather run it yourself?
A 6 PM start with a room that is live beforehand is an awkward DIY situation. You get very little unhurried setup time, and that is exactly when self-run sound goes wrong. Speaker and wireless mic from $249 Friday to Monday, free pickup in Nampa.
